About Beth Loiselle, RD, LDBeth Loiselle is a former patient of Walt Stoll, M.D., who developed the Perfect Whole Foods Diet for his patients. She is a Registered Dietitian who, when she went to Dr. Stoll, was eating what her education trained her to believe was a good diet, but was not feeling well. She was quite surprised when she discovered that her extreme fatigue and other symptoms were not due to having two young children, but rather to what she had been eating! By following Dr. Stoll's advice, she became exuberantly healthy and then went on to write The Healing Power of Whole Foods. Walt Stoll's popular health web site is located at www.askwaltstollmd.com. Beth quickly became dedicated to teaching others what she was learning about whole foods as well as how to incorporate them into their lifestyles. She now firmly believes that whole foods nutrition is one of the critical keys to good health, both in the treatment and prevention of disease. Today Beth works at Good Foods Market & Café in Lexington, Kentucky, a food co-operative where she helps customers shop for their special needs and diets, answers questions about whole foods cooking and nutrition, and counsels them in improving their diets. She also sees clients for private consultations. Through her Nutrition Mission program, Beth presents educational and motivational talks to school children, church groups, scouts, homemaker clubs, support groups - or anyone interested in learning about nutrition. Her goal is to spark an interest in and encourage better eating in those she meets. Her most recent addition to her Nutrition Mission programs for young children is wearing a colorful food-oriented costume while playing the role of "Mrs. Good Foods" during her presentations. Beth received a Bachelor of Science Degree from the University of Tennessee in Foods Science and Institution Management and is a Registered and Licensed Dietitian. She lives in Nicholasville, Kentucky with her husband Jim. They have two children and six grandchildren. |
